Made with a simple yet flavour loaded Char Siu sauce, pork is marinated to infuse with flavour then roasted until caramelised. The damn traffic lights! I first tried Char Siu Pork at home perhaps 10 years ago and the recipe I use has evolved over the years.
I have neither of those things nor do I want to start a fire in my house. But I have come up with a way to make this safely in your own homes without the need of any fire extinguishers. The plus side is: A We can eat triple what we normally do; and B I can share the recipe with you.
The hamper was sent to me as part of a challenge to live of Red Tractor ingredients for a weekand with a chance to win a wonderful break for two people in a top UK hotel. I had to pop most of the meat into the freezer and I dealt with the fresh vegetables first……. I served my delicious baked pork belly slices with some coleslaw, made with the celeriac, carrot and onions that were in my hamper.
Not dry at all. And the flavor especially when smoked is outstanding! At my favorite Chinese restaurant, they will serve this with the main entree alongside the fried rice.

This belly pork takes no time to cook on the barbecue, but an overnight preparation gets you an aromatic marinated flavour and lots of perfect crackling. Shopping list. Make sure you or your butcher score the pork skin well using a small, sharp kitchen knife or a clean DIY knife - nice fine scores make better crackling.
